(wholegrain, rye, strong bread flour, unbleached flour)<\/li><li>75g water, warm. (ideally 29 degrees C)<\/li><\/ul>\n\n\n\n<p>mix vigorously until no dry flour remains, leave for 24hrs after every feeding.<\/p>\n\n\n\n<p><em><u>day 2.<\/u><\/em><\/p>\n\n\n\n<p>the first feed.<\/p>\n\n\n\n<ul><li>30g \u2018mature\u2019 starter. (jar weight +30g total) discard the remaining starter.<\/li><li>50g flour.<\/li><li>60g water, warm (29 degrees).<\/li><\/ul>\n\n\n\n<p><em><u>day 3.<\/u><\/em><\/p>\n\n\n\n<ul><li>feeding is the same as day 2.<\/li><\/ul>\n\n\n\n<p><em><u>day 4.<\/u><\/em><\/p>\n\n\n\n<p>now we reduce the water ratio slightly.<\/p>\n\n\n\n<ul><li>30g \u2018mature\u2019 starter.<\/li><li>50g flour.<\/li><li>50g water, warm.
